TAMARIND
SAUCE
Ingredients

GmsTamarind Paste
1 Cup Sugar
2 tbsp Roasted Cumin Power
2 tbsp Red Chilly Power
1 Cup Boiled Water
Method
Blend
all the above ingredients in a RICO
HAND BLENDER . If the ingredients thickens then add
more boiled water.Put this tamarind sauce in a container & refrigerate.This
sauce is excellent with Bhel & Chaat.
GREEN
CHILLY SAUCE
Ingredients
1 Bunch of Coriander leaves cleaned & washed
8 /10 Green Chillies
1/2 lemons Juice
Salt to Taste
Method
Add all the ingredients & grind them in a RICO
GRINDER MIXER to a homogeneous paste put in a bowl
& chill to serve.
DAHI
VADAS -
A North Indian Delicacy
Ingredients

Cups Urad Dal ( Lentils)
1/2 Cup Mung Dal
2Cups Yogurt
1/2 tbsp Chilli Power
1/2 tbsp Cumin Power, Roasted
1tbsp Salt
1 tbsp Chopped Ginger
1 tbsp Garam Masala
Oil for frying.
Method
Soak
urad dal & mung dal for 8 hours, rinse & drain well.Grind
them in a RICO GRINDER MIXER
to a paste.Add salt & mix again. Remove & make vadas
& fry in hot oil.Cool fried vadas to room temperature.
Soak them for 1/2 -1 hour in lukewarm water.Remove & gently
squeeze out the excess water. Blend yogurt in
RICO HAND BLENDER & add rest of the spices.Add
vadas.Serve dahi vadas along with tamarind chutney.
IDLI
- Steamed Lentil & Rice Cake
Ingredients
2 cups Urad Dal (black gram)(lentils),
4 cups rice washed & drained, 4 tsp baking powder (optional),
salt to taste
Method
1. Separately soak urad dal & rice for 6-8 hours 2. Drain rice
& dal & grind in your RICO GRINDER
MIXER separately to a fine paste. Mix together 3.
Place in a close container overnight to ferment 4. Add salt
& baking powder & mix well 5. Place Idli mixture in Idli moulds.
Steam & cook for 10 minutes 6. Serve hot idlis, sambar & chutney
DOSA
Ingredients
4 cups Rice, 2 cups Urad Dal,
Salt to taste, oil for frying (you can use the idli mixture)
Method
1.Wash & soak rice & dal separately
for 6-8 hours 2. Grind rice & dal into a fine paste, adding
water in your RICO GRINDER MIXER.
3. Cover & keep in warm place overnight to ferment. 4. While
making add salt & water as per desired consistency required.
5. In a non-stick pan spread oil & pour the mixture to form
a thin crepe 6. Serve hot with chutney & sambar
VADAS
Ingredients

Cups Black Gram Dal
2 1/2 tsp Salt
1 tsp Chopped Ginger
6 Chopped Green Chillies
12 Curry pata Leaves
4 tbs large bits of Coconut
Oil for Frying.
Method
Wash
& soak dal for 4/5 hours.Drain & grind in a RICO
GRINDER MIXER 11/2 cup dal with 1 tbsp water, add
another 1/2 tbsp water if required. Repeat the process for the
rest.Add salt, chopped green chillies, ginger, curry pata, &
coconut pieces.shape into small balls & deep fry in hot
oil.
SAMBAR - A South Indian Curry
Ingredients
2 Cups Tur Dal,
2 Onions,
1 Cup Vegetables (drumsticks, brinjals etc.)
1 tsp Mustard Seeds
2 tbsps Coriander Seeds
Little Tamarind
2 tbsp Coconut
2 tbsp Oil
Salt to Taste
Few Curripata Leaves
1/4 tsp Asafoetida
1/2 tsp Fenugreek seeds
1/2 tsp Turmeric
Method
Cook dal & make a smooth paste.Add vegetables & onions.Boil
& keep aside.Roast fenugreek, coriander seeds & asafoetida
in half oil. Grind this masala in the RICO
GRINDER MIXER with tamarind & coconut & a
little water to a smooth paste, & add to the dal.Add salt,
turmeric & little water to get a consistency like dal &
boil for a minute.For seasoning heat the oil, add mustard seeds
& curry pata. Add the dal. Serve hot with idlis & vadas.
CREAM OF VEGETABLE SOUP - For the Soup Lovers
Ingredients
2 Large Onions, 2 large Potatoes, 1 cup mixed vegetables, 6
cups water, 1 onion (finely chopped), 1 cup mixed boiled vegetables,
2 tbsp butter, 1/2 tsp white pepper powder, 2 cups white sauce.
Method
White sauce : 1 tbsp butter, 1 tbsp maida, 1/2 cup milk, 1/4
cup grated cheese, salt to taste.
Melt butter over low heat & stir in the flour & blend
till smooth.Add milk & cheese to cook for 2 minutes until
smooth & thick. Add salt to taste.
For the soup : Boil the vegetables with water. When cooked soft
blend with the RICO HAND BLENDER.
Strain. Heat butter in a pan & fry the onions for 1 minute
& add the above stock. Then add the mixed vegetables, white
sauce, salt & pepper & mix well. Serve hot dotted with
cream.
WATERMELON COCKTAIL
Ingredients
4 Cups seedless watermelon pieces, Sugar to taste, 1 Cup water.
Metod
Blend the watermelon & sugar & water in the liquidiser
jar of the RICO INTERNATIONAL GRINDER
MIXER for a minute. Serve Chilled.
MILK SHAKES
Chickoo/ Mango/ Strawberry/Banana
Ingredients
½ kg fruit ½ litre milk, 6-8 tbsp sugar, ice cubes
Method
1. Take ½ the quantity of fruit & milk & blend along with sugar,
& ice cubes using the RICO HAND BLENDER.
2. Stop when turned to a smooth paste. 3. Repeat the process
with the remaining fruit & milk. Mix well & serve chilled.
SEEKH KEBAB - A Non Vegetarian Delight
Ingredients
½ kg mutton leg portion, 1 egg, 1 tsp ground coriander, 1 tsp
ground cumin, ¼ tsp chilli powder, ½ tsp garam masala, 1 lemon
sliced, 1 tomato sliced, 1 onion sliced & 50 gms ghee.
Method
1. Clean meat. Remove bones, skin & fat from the meat & refrigerate
for ½ hour. 2.Mince meat by grinding it for 1-2 minutes till
finely ground in the RICO GRINDER MIXER.3.
Combine mince in a bowl with egg, coriander, cumin, chilli &
garam masala powder 4.Apply oil to fingers & skewer 5. Mould
tablespoons of meat in a long sausage shape on the skewers 6.
Brush with ghee & grill until brown 7. Turn skewers occasionally
8. When kababs are ready serve with sliced onion , tomatoes
& lemon.
